2 1/2 cups raw rice 5 cups water 1 onion, chopped 1 green bell pepper, diced 1 red bell pepper, diced 2 cloves garlic, chopped 1/2 cup celery, diced 4 cups mushrooms, sliced 1/4 cup vegetable oil 1 tablespoon sage 2 teaspoons thyme 2 teaspoons parsley salt and black pepper
While heating oven to 350 F, sauté a few minutes: onion, bell pepper, garlic, and celery. Add mushrooms, sage, thyme, parsley, and salt and pepper. Sauté a few minutes more. Add water. Stir well and bring to a boil. Add rice. Stir well. Cover and carefully transfer to oven. Bake at 350 F for 1 hour (or until rice is done). Do not stir or uncover while cooking. Fluff rice.
